This week, we’re diving into a grape that needs no introduction—but always deserves a little extra appreciation: Cabernet Sauvignon. Whether you’re a longtime Cab fan or just getting to know it, there’s always something new to discover in the glass.

Where It All Began

Cabernet Sauvignon traces its roots back to Bordeaux, France, where it was born from a natural crossing of Cabernet Franc and Sauvignon Blanc. From there, it went on to become one of the most planted—and most loved—red grapes in the world.

Today, Cabernet shines in everything from classic Bordeaux blends to bold California bottles, and right here at Barons Creek, we’re proud to showcase how beautifully it expresses itself across different regions.

Our Cabernet Lineup

We currently feature three standout Cabernets, each with its own personality and story:

  • Crazy Train – An organically grown Cabernet Sauvignon from the Tagaris Family vineyards in Washington.
  • Boots – A true Texas original, made from 100% Texas-grown fruit from the Lahey Family in West Texas.
  • Reserve Cabernet – A premium selection sourced from the Zirkle Family vineyards in Washington, known for producing some of the most sought-after fruit in the region.

Texas vs. Washington: A Tale of Two Terroirs

One of the most exciting things about Cabernet Sauvignon is how much its environment—its terroir—shapes the final wine.

Texas Cabs tend to be a little lighter and incredibly approachable, with vibrant fruit and softer tannins. You’ll often find flavors of blackberry, black currant, and cherry, layered with a subtle mineral edge from our sandy soils. Thanks to those big Texas temperature swings, these wines stay fresh, fruit-forward, and perfect for pairing with barbecue or anything coming off the grill.

Washington Cabernet Sauvignon
Washington State brings a different energy to Cabernet. Think ripe, plush fruit balanced by bright acidity and structured tannins. With hot sunny days and cool nights in a near-desert climate, these wines deliver bold dark fruit flavors alongside notes of espresso, spice, and even a hint of earth or graphite. They’re rich, expressive, and beautifully balanced—ready to enjoy now or age over time.

A Closer Look at Organic Cabernet

Our Crazy Train Cabernet takes that Washington profile one step further. Grown using organic farming practices, this wine reflects a commitment to both quality and sustainability.

Without synthetic pesticides or fertilizers, the vines can thrive naturally—often resulting in healthier fruit and a more expressive connection to the land. In the glass, that means vibrant, clean flavors and a sense of purity that guests can truly taste.
